Is there any brand or type that is better than others when it comes to brake fluid? like royal purple or lucas for example how power steering fluid that's supposed to be better than just regular penzoil brand.

I think brake fluid is brake fluid. I don't think the half off store special stuff is the best choice, but any brand name I think would be fine.

DOT 3 or 4, if you go with 5 you need to evac the whole system. I use Valvoline SynPower in my race car. Should be just fine for you.

Brake fluid absorbs moisture in the air, so never let it sit out without the top tight. The biggest differences are dry and wet boiling point, but unless you really get out and run hard, you'll never even get it hotter then your morning coffee. Most synthetics are 400deg + for dry.
