It will work be cheap easy and effective to get the job done , sometimes you gotta improvise make sure to have jack stand under the bell housing for added reassurance but you should be fine .

I put the car up on a lift, dropped the whole old setup out, swapped the motor to the new k member on the ground, then lifted it all back in. You should try that ;p

But in all seriousness, your situation, try what Musturd said, or grab the bar that HF sells, but idk if I would trust my life to it

I made mine out of tube steel but that HF one will work just fine. May want to reinforce a few areas with a welder for piece of mind.

IMO putting a board across the fenders is a bad idea since you're putting all the weight on thin sheet metal, probably end up bending them. Cutting it to size to fit would work but you lack the height needed to clear everything and limit what you can strap to.

I made mine out of tube steel to sit on the inside if the skirts. I used rubber chair leg ends to ease the damage and my trailer straps to hold the motor up from the engine mounts.

Well turns out one of the friends that is helping swap the k member has an engine hoist... so I guess there's no need to worry about supporting the motor now haha
