what clutch and parts would you recomend?

See above, MM is the same as a stock cable....Idk why that one is different, maybe that mount is in a different location...

I have went through my share of clutches over the years with my 3 stangs. IMO Exedy is the best and they manufacture many OEM clutches for ford and other manufactures. As others have said ford TOB

I have the same combo (Exedy Stage 2, I think rated at 400-450 lb-ft) and it's great imo, grabs pretty hard and I know it can support a mild blower application if I do that later.
