Possible head gasket

So I've been meaning to swap thermostats for a bit now, and since I have a new daily I can take the time I need on the mustang. However, my reason for the thermo change was due to it continuously getting hot. Its a 195 thermostat and would always run at 206-208 on the datalog. Well, upon draining coolant, I noticed blue material in the filler neck. I'm curious if that is possibly head gasket material
Any thoughts.

Probably not. You'd have some serious damage if you actually saw head gasket material in your radiator. It's probably just some RTV debris from water pump or intake, maybe the t'stat housing. The SN fans turn on at 210*, that's probably why you see the temps you do. Sounds normal to me.

On track, I see 195* when the motor is coming up to temp, 210* on normal days/conditions, up to 230* when it gets HOT outside and I'm pushing it hard for a longer race.

Does your tune turn on the fans earlier? Or do you have a non OEM fan controller? Will it go hotter if you push it hard? Do you have a big radiator?

Stock radiator, tuned with a QH so I control all fan settings. Fan is set to cut on at 210. I'm going to see how it responds to the 180 thermo and I'll be able to install my sending unit for my water temp gauge. This car is ready for some TLC now that it's no longer my daily.

pretty much what RichV said. 208 is perfectly fine for these cars.

I would say, if it aint broke, don't fix it. You might create a unintentional problem.
