I've never actually purchased a catback kit for any of my cars. I've always just pieced together a catback from parts that I specifically choose. I did the upswept tailpipes on my '02 GT and my '95 Cobra. Ford had it right with those tailpipes and they should have kept doing them. The '02 GT had Flowmaster original 40s, 2.5" flow tubes made by the exhaust shop, and fox body LX tailpipes with 3.5x18" Magnaflow rolled-edge tips (longest I could install with the available length of the tailpipe before the first bend near the front of the gas tank). The Cobra has the same fabricated flow tubes and LX tailpipes, with the exception of Spintech Sportsman 3000XL series mufflers (which I'm going to replace eventually since they're too large to tuck up as neatly as I want them to) and Gibson 3x18" tips. I bought the really cheap Dynomax 2.5" mandrel-bent tailpipes off of Summit Racing. Dynomax is manufactured by Walker Exhaust (which makes OEM applications for just about everything), so they fit very well. Apologies for the quality of the pictures as well as the cleanliness (or lack thereof) of the car. The weather hasn't turned nice here just yet; I'm still waiting for a good opportunity to give her a wash and wax.
