I'm losing my garage this year to a home improvement project. My 95 GT is stored from late fall thru early spring. Who makes the best car cover? Should I even cover my car? Anyone have any other low cost alternatives/ideas for storage other than outside under a cover?

If you had a hard top I'd say don't cover it, but you don't.
I don't like the idea of the cover sitting on the car being buffeted by the wind and causing rub spots on the paint.
Tractor Supply/ Northern Equipment (probably other places too) has the soft sided car ports for @ $ 3-400 . Possibly less if you only get the roof only model.
The other option would be the metal carport for @ $600

And you're right, Formerly DesertCox, I don't really want to cover it, but that may be my only option. I'm gonna look into the soft sided car ports.
