My engine is a rebuilt 302 with a Vortech, the only oil I added was about 1/2 a quart in the lifter valley to lube the lifters. How many quarts should I put in? I was thinking 6.5 or 7 quarts?

    Stock pan?

find out how much the vortech takes (assuming it's fed from the motor) and add that to 5qts. Then top it off after you run it, if necessary.

The Vortech does not use enough oil to change the fill requirements. Fill normally.

Run what your engine builder recommends.
