Newbi Questions!!!???

ok i have a 98 gt with full pi swap, jlt, sct tune, gears, pullies, tb,spacer and plenum my questions are

1.what is my oil pressure gauge suppose to read while at idle and while im driving? where is it never suppose to be?
2. my car runs around 180-200 degrees water temp gauge is that normal and where should it never be?
3.where is my fuel pressure gauge suppose to read...currently stays around 40psi at idle and never more than 45 at WOT
4.what should i expect with my egt gauge i have stock headers and slp loudmouth with vrs off road x-pipe
5.if adding n2o what other gauge do i need?

oil pressure should be 30+ at idle (mines about 45) and about 50+ at higher rpm (ive seen about 75 psi)
180-200 is normal as the thermostat opens around 195 degrees
fuel pressure should be ~38 pounds at idle with the vacuum line removed from the regulator
egt? no idea on that setup
id add a nitrous pressure guage if your gonna add nitrous
