Can you run with only the single cat off the manifolds and nothing else attached.

No mufflers
But I would do the opposite

I'd dump the cats
Go with a h pipe
And whatever mufflers you want

Hello and welcome to the forum. Agreed with @RAU03MACH. Unless you're running long tubes in an application that would benefit from open headers, what you are describing would be counter-productive. An off-road H or X pipe with dumps may get you what you want without too much worry of detrimental effects to the valve train.
