I have thought about a 03 cobra wing, saleen or possibly Roush wing.

I say wingless. Since I got my Bulllitt Ive gotten to where I cant stand a wing on a new edge, unless it the 03/04 cobra wing. im actually wanting to do the 03/04 cobra wing and rear bumper. As for the scoop delete panels, they come stock on the Bullitt, I think to pull them off you need to ditch the stock rocker panels for the cobra rockers. ive seen a regular gt on ebay with the scoop deletes and stock rockers, imo it looked like crap.
Heres an example of the basic look you would end up with going wingless, scoop deletes, and cobra rockers. My rockers are the Bullitt rockers but I was missing the front mudflaps and made my own replacement pieces that don't have the flap. Basically they look really close to the cobras.

You could make that car look really awesome with just a few simple things:Lower it. Change the headlights (just my opinion). Get rid of the grille and the chrome pony. And an 03/04 cobra wing would be sweet on there!

As soon as I get it lowered and some new rims. I will either do the cobra lip or wingless. I am going to change the headlights to a set of tinted tho match my taillights. I am also either going to a cowl hood or an svo style similar to this.

I also plan on doing a grille delete very soon.

I am more than likely going with a nice cowl. Living in Va you do not have many options because of hood height laws.

Va is a commonwealth (communist) state. They have some of the dumbest laws for vehicles that I have seen. I know a guy that received a $50 fine because he had a license plate bolt missing even though his tag was still straight and secured.

A hood height law actually makes sense.
If you've been behind the wheel of a car with a large cowl, you'd understand why it can be dangerous.

Even a simple 2" cowl can be dangerous.... if the driver is a midget.
