Engine trouble. Flooding?

I just completed a 5.4 swap I have been working on for 6 months. I am having an issue with it falling flat on its face under throttle. It starts, idles to temp, and revs strong in the garage.

However... lol. We have tried to drive her 2 times now. I can get her out of my neighborhood babying it. Maybe 70 yards driving, take a right, we have a 100 yard straight road with a turn around at the end. As long as I stay under 2k, she feels fine. As soon as I get over that, or over 1/4 throttle, it falls flat on its face. Then sputters, acts like she is flooded, and if I just sit still, it will eventually gain its composure and be rev-able again. If when sputtering, any gas to help it get back to idle, it stalls and is hard to start again.

I checked my IAC today, its pretty new and super clean, so I put it back on. My filter for air may be dirty, it is a K&N cone type filter. I used to put them in the dishwasher, that still viable?

What do you guys think?
