Near stock 98' GT which thermostat?

After wrecking my 98' GT, I've decided to overhaul the cooling system. I went with a Mishimoto radiator, 180 tstat, and replaced the stock fan with a newer one. Now after replacing the 180 tstat, I did a little digging and I'm not so sure that's the best option. With a lightly modified 98' gt that does track days through the summer in Nebraska, which thermostat would you all recommend?

I did track days for a number of years with the cooling system on my 98 rock stock. Fan, thermostat, radiator......everything. Never a single issue. I doubt I could stress the cooling system as bad as Ford did when they were designing and testing it. The computer wants to see a certain engine temp and works to run the engine at that temp. Something to consider.
