Start with a 4-barrel 650cfm and then choose your appropriate options like manual or electric choke. That should be plenty for the street. If you want more "oommph" and also want to spend more money on gas, then go with something bigger. The biggest I've ever personally run on a street car was an 850cfm, and that was on a chevy 350 which is greatly comparable to your 351 in displacement. Demon carbs are good from what I've heard from my buddies that still run carbs, Edelbrock is what I prefer and have always dealt with, and Holley I wouldn't use if someone gave me one due to the amount of problems I've had with them in the past. It has been 10 years since I've messed with Holley, so they may have worked out the problems.

I would run a 750 vacuum secondary(if your running auto trans) you can jet down a little for the stock 351w if needed, the 750 will give you room to grow if you decide to change cam & heads ect. in the future, on a standard shift car, I would go 750 double-pumper, again this will leave room for upgrade, without buying another carb, I have been building holleys for years, love them. I install power-valve blow-out protection in the base plate of all mine, In my opinion, thats the only thing thats aggravating on a holley-blowing out a power valve, I use to run a 750 d.p. on my 306, f-cam, pro-comp 200cc heads, vic junior intake-loved it- milage wasnt great, but with 4:10's ran 11.60- Brad
