From the two sets of CMS stage3's I've tried tuning (For me) I spent a lot of time messing with drivability issues. (I'm not the best tuner but GrecoFace from Modular Fords had his buddy install them in his Red 99+ car and he said the same thing. They also spent a lot of time with drivability and the tune. Sean (Oxford) loved his stage 3's on the street but he's as serious as you can get without taken the car off the road completely.
The last time I talked to Jim, he told me that unless I'm trying to go with more than 650rw his S3's would be overkill and start to affect power under the curve for a DD since it's is shift the power range. If your car was a duty race car (Street or strip) and that was your only concern, then I'd go with the 3's.
It seems you're after the same thing I was so stick with the 2.5's.
