Long Tube headers usually have the cats attached right after the collector. From there, 18" away, the midpipe, and then out to mufflers, then tail pipes.
As far as Off-Road midpipes. The cats can be clamped on. Removed when you want with a piece of pipe in place of them.

In CA it's not worth the hassle for the little bit of power you'll get. Even if you swap back to pass SMOG inspection, they are not legal to have on the car if you are ever pulled over.
On a N/A V6 I wouldn't never go without cats. It will cost you hp and tq where you want it.

You know, this should be read by every V6 owner and branded to the back of their brains. You can modify the exhaust in a number of different ways, just make sure you have an updated tune file created afterwards. That should go without saying.
Also- Keep the cats and add a VAP intake spacer. Good stuff.
LilRoush, I'd like to see a video posted of your car. A quick walk around before giving us a listen to the motor from the exhaust pipe tips perspective. I love your car.

I swap my exhaust every 2 years, it's not a big deal. Longtubes are the only headers worth the work of the swap in the first place.
