I've got a set of 30lb fms injectors, do you all think that will be too much injector for a 100-125 shot of nitrous?

Are you running a wet kit or a dry kit? If you have a wet kit, then the injector size becomes irrelevant because the additional fuel is supplied by the auxiliary fuel line and the nozzle. If you're running a dry kit, then it becomes a function of whether or not your injectors can support the total amount of power your engine is producing on spray.

If I go with a dry kit, does the fuel system adjust to the nitrous being activated, or does it supply a constant amount of fuel, being rich when the nitrous is not being used?

It adjusts when the nitrous is activated. I would recommend a wet kit.
