Gasket and spark plug questions

I finally bit the bullet and and found a reliable mechanic to put my heads/cam in. I know I should have done it myself but I honestly do not have the energy with the health problems I have had over the years, it would have taken me weaks if i didn't have a problem like my heater core did. I found a guy that manages a service center and wrenches on his own 1200hp fox for fun so he said it was no problem. They got it stripped down last night and came up with two questions. I am just putting the twisted wedge 165s and stage 1 cam since it is a daily.

1.) he said he thought I got the wrong gasket? Something about the ridges on the edges that he thougt it was for a different type of head? Are there different types, does any of that make sence?

2.) he said the spark plugs are going to be different, what is recomended there?

for spark plugs... you should run the plugs that the head manufacturer recommends.

For head gaskets... I'd need to know what gaskets you bought, to tell you if they were right or wrong... but you would be fine with a set of 9333PT-1 gaskets

sorry for the lack of details but as you can tell i am still learning motors. He didn't give me the numbers on the gasket kit I got, I ordered it as the same time so I thought it was correct. There were no instructions per say as to which spark plugs would be best to get or use, I will see if they say online...
