Upgrade to V8

I have a 2000 3.8 coupe and I want to upgrade to a V8. What are my junkyard donor vehicle options(I.E. Lincoln, Mercury, Ford truck, 4.6L, 5.0L, Coyote, 2V, 4V, etc)? I would prefer something from the Coyote family but will leave my options open.

The first and most important set of questions, how much money are you willing to spend, how much work are you willing to do, and how mechanically capable are you (tools, workspace, and ability)?

I have the space, tools, and ability. I can afford to buy a junkyard engine and take the time to rebuild it. I am retired so I have the time to do it right the first time. Of course I would like to get the latest, greatest, wiz bang motor but I do not want to wait 2 years until one becomes available hence desiring information on what is reasonably available.
