I think I understand what you are talking about, and if it is, that is completely normal. The Gas gauges in our cars suck. Plain and simple. Getting an aftermarket fuel gauge could stop your problem completely, but just learning how yours works on your car can get the same results.
On my car I know that if I get 50 miles before I hit 3/4 tank then I'm doing alright. I know for my car the second 1/4 goes faster than the first, and the last 1/2 goes by really slow. I also know that I have 4 gallons under the E, which I hope to never venture into, but I know it's there.
If you just let go of the idea that the gauges are correct, and assume that they always work in the same fashion instead, it makes life much easier. When I first got the car I, like you, hated the fact that my gauges work the way that they do, but it's something that is very easy to get used to, and like I've said before, when you know how they work in your car, it isn't nearly as bothersome.
