Whoever said that Fbodys handle like shit is a retard. The come factory with SLA suspension up front and TA/PH suspension in the rear. Both are better on and off track use than Mcpherson strut and 4 link that factory gave us. LS1 powered 4th gen Fbody also has an all aluminum block with composite intake manifold, that is set back futher behind the front suspension, equaling in better weight distribution. The only possible advantage that a mustang will have is the less weight. While LS1 Fbody does not really have any weight to shed, you can lighten up SN95 considerably. You also don't have to upgrade to a beefier rear end, because mustangs come with 8.8 rear, while Fbody has a tiny 7.5 ten bolt.
The reason why I went with SN95 over LS1 is purely subjective. I like the driving position in mustang better. Most of the performance parts are cheaper, and this car is damn reliable. I also like that mustang is dimentionally smaller than Fbody, which was a parking nightmare (I had LT1 Trans Am as my second car, when I was 19)
